I’ve been getting into Noosa yogurt for breakfast lately. I will do half a container of the strawberry rhubarb, peach, or blueberry with my cereal and it is an easy and yummy way to start the day! I like to dress up my yogurt a little, though. Plain is good, but some berries and crunchy-sweet granola topping adds that little extra touch that will have you shoveling in your yogurt!
It’s so easy to make, too. The whole thing takes about 20 minutes, and 15 of that is waiting for the oven to finish baking the granola.
Ingredients
1 cup old fashioned oats
3 tbsp salted butter, melted
1/4 cup brown sugar
1/4 cup chopped or slivered almonds
2 tbsp roasted coconut chips
1 tbsp honey
1/2 tsp cinnamon
1 tbsp extra virgin olive oil
Process
Preheat oven to 350F / 175C. Line a baking pan with parchment paper.
Combine all ingredients in a bowl and stir to coat. Spread out onto the parchment-lined pan.
Bake for 10 minutes, stir, and continue baking for an additional five minutes.
Clusters will solidify once cooled completely.
Sprinkle over yogurt or ice cream, or enjoy it plain!
